Paleo Peanut Butter Chocolate Chip Banana Muffins

One of my favourite snacks for the kids is sliced banana with natural peanut butter. So when I came across a recipe for paleo banana bread I thought I would change it up and put my own spin on it by adding in our favourrite combo with some always yummy chocolate chips. These passed both the husband and kid test and just turned out sooooo yummy. Enjoy!
Ingredients
  • 4 ripe bananas
  • 4 eggs
  • 1/2 cup natural peanut butter (chunky or smooth will work)
  • 4 tablespoons butter, melted(can substitute coconut oil)
  • 1/2 cup coconut flour (or almond flour, etc)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • pinch of sea salt
  • 1/2 cup mini dark chocolate chips
Instructions
  1. Preheat your oven to 350 degrees fahrenheit
  2. Line muffin tin with papers
  3. Combine your bananas, eggs, and peanut butter, and butter in a  mixing bowl and mix well with a mixer.
  4. Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well. Fold in chocolate chips
  5. Pour your batter into lined muffin tins and spread it evenly (you can use an unlined muffin pan, just grease it well)
  6. Place in your preheated oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean
  7. Remove from oven and put onto a cooling rack
  8. Slice and serve (I always love to add butter!)
