Today is all about Saskatoon berries! These are my favourite berry of the year and they grow native my province of Alberta. I have also heard of them referred to as Service berries and although these little guys may look like a blueberry the favour is much different, slightly tarter, and they contain eatable seeds. No worries though if you aren’t able to get your hands on these berries, you can still substitute the recipes for blueberries.
4 cups Saskatoon Berries
1/4 cup water
Juice from 1 lemon
3/4 cup white sugar
3 tablespoon all-purpose flour
2 pre made pie crust or home made double crust 9 ” pie/ 12 pre prepared pastry lined tart shells
- 1 tablespoon butter
- Preheat oven to 425 degrees F (220 degrees C).
- In a pan, simmer berries and 1/4 cup water for 10 minutes. Squeeze in lemon juice.
Combine sugar and flour together in a separate bowl and then stir in to the berry mixture. Allow sauce to thicken to desired consistency, then pour mixture into a pre prepared pastry lined pie pan or pastry lined tart shells. Dot pie or tart shells with dollops of butter. For a pie , place second crust on top of pie; seal edges.
- Bake for 15 minutes. Then reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 to 45 minutes, or until golden brown. Let cool before serving
