I love to eat and cook anything with garlic but its not my favourite item to work with on a daily basis because of the nasty smell it leaves behind. I have started incorporating garlic infused olive oil into my cooking more an more as it eliminated having to handle the yucky stuff but still gives you the great flavour. I recently decided that I wanted to try to make my own and now I am hooked. I was so impressed at how easy this was to make, I will definitely be doing this with other herbs as well in the future. - Extra Virgin Olive Oil
Begin by deciding how much garlic olive oil you want to make. The recipes I found all varied from six cloves of garlic per cup of oil to one head of garlic per cup of oil. Peel your garlic and cut it into small cubes or slices. Set your pan to medium and add a small amount to your oil to the bottom, just enough to coat the pan. Throw in your garlic and saute for about 3 to 5 minutes. If it starts to brown, turn your heat down to a low/med. Now add the remainder of your extra virgin olive oil, allow the oil to begin having bubbles come to the surface and then cook on that heat for about 3-5 more minutes. Once you are happy with the length of the oil cooking simply jar and seal. This may be my christmas favours this year for friends and family!
